Instructions:

  1. First of all, make a paste of chicken, yogurt, ginger-garlic in a big bowl, add turmeric powder, coriander powder, cumin powder, red chili powder, garam masala powder and salt, mix and keep aside for some time.
  2. Take a large vessel and heat the oil in it on medium heat. Add the onions and cook until soft or slightly brown in color – about 5 minutes. After that add green chillies, bay leaves, cinnamon sticks, cloves and cardamom pods etc. and let it cook for 1 minute.
  3. After that put the marinated chicken in the pot and cook till it turns brown from all the sides. After that add saffron and 2 cups of water. After that bring to boil, then lower the flame and cook on low flame for 20 minutes or till the chicken is cooked completely.
  4. Meanwhile, cook rice according to package directions.
  5. To make the biryani, spread half the rice in the bottom of a large pot or Dutch oven. Add cooked chicken and remaining rice on top. Sprinkle coriander and mint leaves.
  6. Cover the pot with foil or a tight-fitting lid. Place the pot on low heat and cook for 30 minutes, or until the rice is cooked and flavored.
